Creative bartenders have been experimenting with variations on the Bellini and its French cousin, the kir royale (champagne and crème de cassis), for decades.
One of the better versions I’ve come across is the True North Bellini served at Azure, the bar off the lobby of the InterContinental Hotel on Front St. W.
