“We are trying to kill the martini,” Sweete says of his hope to pound a giant stir stick into the heart of the fruity fauxtini craze, the generation of sweet drinks “based on vodka and cranberry.”

To that end, Sweete believes the well-made cocktail’s time has come in Toronto.

“We see how the martini craze was, and that’s at the tail end of its cycle,” says Sweete. “It was successful and (the drinks were) pretty mediocre. This is the right time for cocktails.”
